Eggless soft Pancakes

We all struggle at times to find a quick fix recipe for kids which will be filling and can at least make them forget their tantrums for a while . I have always tried to find out ways in which I can make something at home with fresh ingredients rather than buying it from outside .

This is one recipe which can be made to keep it in their lunchboxes as it hardly takes any time and is easy to make and can also be given when they are just back from school after a long playful day and are really hungry.


                                    


This is the basic recipe for the egg less pancake. The ingredients are :

Plain flour - 1 cup
Milk - 1 cup
Baking soda - 1 teaspoon
Baking powder - 1/2 teaspoon
Vanilla Essence - 1 teaspoon
Sugar - 1 tablespoon
Salt - 1 pinch
Some oil/ Butter

Recipe :

Sift the flour and baking soda and keep them aside. I have shown sifted flour in a beaker in which I use to blend all together.




After this I pour milk, sugar, essence, salt all together and use a hand blender for a smooth blend.



You can use a container a big bowl etc and can use a spoon to blend as well. Its just that I find it really quick and easy. Now, on medium heat  take a few drops of oil in a pan (I find that only a half teaspoon oil is enough if you are using a non stick small pan.



Pour batter just enough to make one pancake and can be easily spread only with its consistency


After a few seconds or just before a minute is over you can see a few bubbles on the surface.

 and then turn the side.

After a minute or so the other side is also done and your pancakes are ready. Else, let them get done for a while. You may would like to use butter instead of oil which gives more flavor and better color as well.

Serve these with honey and some fruits as a side.

Egg free glazed Donuts






Ingredients :


For Donuts

Flour - 1 cup (1/2 cup self raising + 1/2 cup plain flour)
Yeast - 1 teaspoon
Baking Powder-1/2 teaspoon
Milk - 1/2 cup
sugar - 1 1/2 table spoon
Salt- 1/2 teaspoon
Butter - 1 table spoon

Recipe

Mix all the ingredients together except the flour and keep aside




 Sift both types of flour in a bowl with Baking powder.


Now add the flour mix together with the liquid mix very well. It has to be a sticky and loose dough.


Cover this and keep it in a warm place for couple of hours or till the dough rises and becomes double.


Dust your work space with flour and knead well.


    

Now, this is the time to start rolling the dough.  Thickness of the dough should be about 1/2 inch.



Now, cut into donut shapes.


Keep these in a tray and again leave them at a warm place to rise for at least 30
 minutes.

Now heat oil in a frying pan and when the oil is hot enough start frying them on medium heat.



Keep turning them so that they are evenly cooled. Take them out when they are golden brown and wait for them to cool down.



For Glazing :

Icing sugar - 1 cup
Vanilla essence - 1 teaspoon
water/ milk - 3-4 tablespoon

Mix all the ingredients together.

You don't want the icing mixture to be very runny/ syrupy as they will keep dripping down from the donuts.

Now, take a bigger bowl of partly filled with hot water and put your icing mix bowl on this. stir well and then start dipping the donuts one by one.


Decorating your donuts:

Possibilities are endless. You can add color to your glaze. Instead to glaze you may like to use chocolate instead. Add sprinkles (I have used sprinkles here)

After dipping the donuts in icing sugar you may want to decorate and give them a dip in your favorite sprinkles.

Baked Donuts :

Instead of frying you might would like to opt for the baked donut option.  For this preheat the oven at 200 degrees and keep the donuts in a baking try and inside the oven for 12 minutes or so. (Times may vary for different makes etc)





After glazing : 



This recipe makes about 14 small-medium sized donuts, so if you are want to make a bigger portion please adjust the quantity of the ingredients accordingly.

Sabudana Vada with yogurt mint chutney


For sabudana Vadas

Ingredients

Sabudana (Tapioca seeds) - 1/2 cup
peanuts - 1/2 cup
potato - 3-4 medium sized
oil - 2 tablespoons
coriander leaves
red chilli powder - 1/2 teaspoon
salt - to taste (for vrat recipe please use rock salt instead of normal salt)

Preparation

Soak sabudana for 1/2 an hour if you have smaller ones. If you have the larger seeds you might need to soak them overnight. So plan ahead.



Boil potatoes. Take a large bowl, peel and mash them

Roast peanuts, grind coarsely in a mixer.



Finely chop coriander leaves.

Recipe

In a large bowl, combine mashed potatoes, soaked sabudana and ground peanuts.
 


Add finely chopped coriander leaves, red chilli powder and salt to taste and mix well.


 


Heat a non stick shallow pan on medium flame and  put a tablespoon of oil. Traditionally sabudana vadas were deep fried but they soak a lot of oil/ ghee. So if you are using this method actually you are making them a lot healthier way.





Take smaller portions in hand and make round dumplings and put them in pan till they are cooked.




You will have to turn them in between so that they are cooked from both sides. They turn nice golden brown in color and soft inside and crispy outside.


When these are properly done serve hot with my favorite yogurt - mint chutney.

yogurt mint dip

This dip is a super  quick fix really !! It will surely not only satisfy your taste buds but will definitely refresh your mind and soul.

It wouldn't take more than five minute of yours to prepare but the effects will last longer.

Ingredient
yogurt - 1 cup
mint - a bunch of leaves
green chilli - 1 (birds eye)
salt - to taste

Recipe

Take all the ingredients in a grinder and grind for about 30 seconds. You may stop if the mint leaves and chilly are done.



And its done. Yes!! really as simple as that and as fast. Tastes heavenly and spicy. If you or your kids do not want spicy, you may omit the green chilli completely.

Sabudana Khichdi for Vrat in microwave

Ingredients 

Sabudana Seeds - 1 cup
Peanuts - 1/2 cup
Potato - 1 large
Oil - 1 Table spoon
Cumin seeds - I tea spoon
Green Chilies - 1
Rock Salt - To taste (if not for fasting you can use normal edible salt)

Coriander - to garnish

Recipe

Preparation :

I had small sabudana (Tapioca seeds) seeds in home, soaking them just for half an hour before cooking is enough. If you have larger seeds you may have to soak them overnight.



After peeling, cut potatoes into small even pieces and keep aside.



Roast peanuts in a pan and grind coarsely in a grinder.




In a microwave safe bowl take a table spoon of oil and keep it in microwave  and turn it on for a minute.

Take out and add cumin seeds and cut green chilies to it.





put it in microwave for 1 minute again and then take it out. Add the freshly cut potatoes and a pinch of salt. Mix well and put it in microwave for 2 minutes.



While the cooking bowl is in microwave  mix soaked sabudana and crushed peanuts well you may add salt at this time according to your taste.



After 2 minutes take the bowl out and add sabudana mixture to this. Mix well.




 you will need to cook it in microwave for about 5-6 minutes again. Take it out in between once after 2 minutes stir it well so that it doesn't gets stuck together and keep it back in microwave for the rest of the time ( about 3 minutes or so).



You will know when its done as it changes colour (becomes a bit transparent and that's the sign that its cooked)



Garnish it with finely cut coriander leaves and serve hot (preferred)
