Sabudana Vada with yogurt mint chutney


For sabudana Vadas

Ingredients

Sabudana (Tapioca seeds) - 1/2 cup
peanuts - 1/2 cup
potato - 3-4 medium sized
oil - 2 tablespoons
coriander leaves
red chilli powder - 1/2 teaspoon
salt - to taste (for vrat recipe please use rock salt instead of normal salt)

Preparation

Soak sabudana for 1/2 an hour if you have smaller ones. If you have the larger seeds you might need to soak them overnight. So plan ahead.



Boil potatoes. Take a large bowl, peel and mash them

Roast peanuts, grind coarsely in a mixer.



Finely chop coriander leaves.

Recipe

In a large bowl, combine mashed potatoes, soaked sabudana and ground peanuts.
 


Add finely chopped coriander leaves, red chilli powder and salt to taste and mix well.


 


Heat a non stick shallow pan on medium flame and  put a tablespoon of oil. Traditionally sabudana vadas were deep fried but they soak a lot of oil/ ghee. So if you are using this method actually you are making them a lot healthier way.





Take smaller portions in hand and make round dumplings and put them in pan till they are cooked.




You will have to turn them in between so that they are cooked from both sides. They turn nice golden brown in color and soft inside and crispy outside.


When these are properly done serve hot with my favorite yogurt - mint chutney.

yogurt mint dip

This dip is a super  quick fix really !! It will surely not only satisfy your taste buds but will definitely refresh your mind and soul.

It wouldn't take more than five minute of yours to prepare but the effects will last longer.

Ingredient
yogurt - 1 cup
mint - a bunch of leaves
green chilli - 1 (birds eye)
salt - to taste

Recipe

Take all the ingredients in a grinder and grind for about 30 seconds. You may stop if the mint leaves and chilly are done.



And its done. Yes!! really as simple as that and as fast. Tastes heavenly and spicy. If you or your kids do not want spicy, you may omit the green chilli completely.
