Egg mayonnaise sandwich

This is the first time I am posting any recipe which contains egg on my blog. Like other recipes here mostly my recipes would be for children or suitable for the lunchboxes as well. I love making this one as it hardly takes any time. You just need to boil eggs and other than that no cooking involved in it as well. This recipe makes two filled sandwiches which don't need any reheating/ heating as can be eaten cold, would be as yummy as ever.

The ingredients you would need are 

Ingredients
Boiled Egg - 3
Bread - 4 slices (I have used wholemeal version)
Mayonnaise 
Salt - to taste
Ground pepper - a pinch
Coriander/ Parsley leaves - finely chopped

Recipe:

Take a pan with water and let it boil. Once it starts boiling put the eggs in and let it boil for 7-8 minutes.





Let the boiled eggs cool down and crack the shell and take the shell off.



Finely chop the eggs add mayonnaise, salt, pepper and finely chopped coriander/parsley leaves to this.





Mix well.

Now spread this mixture evenly on the bread slice. Now, cover this with another slice.


Cut these sandwiches into your desired shape- triangle/squares and serve or pack in the lunchbox. :-)



Another variation is - that you top up the egg mix with cheese slice and grill it in a sandwich press or grill. 



This is one quick and easy sandwich recipe, which is very healthy, protein rich and nutritious. These sandwiches are much loved by the kids and grownups alike.
